I also symlinked /opt/ltsp/images/i386.img to /dev/disk/by-uuid/path-to-the-stick-partition, and /opt/ltsp/i386 to /

Now I'm able to do the following:

1) To boot the stick normally, like I would boot an external hard disk, to install packages in it etc

2) To boot it in cow mode, by just adding `init=/sbin/init-ltsp` in the cmdline (dpkg-reconfigure grub-pc to make it permanent). This prevents the usb stick from wearing out from frequent use.

Then this is an ltsp server, I can serve the usb stick partition to multiple clients in the network. No need for an additional /opt/ltsp/images/i386.img, I'm serving the whole partition.

3) I can have a [mac:address] section in /etc/lts.conf for some client that doesn't have enough ram, and disable a whole lot of services. This allows me to boot a recent distro in a client with 128 MB RAM!

So, editable stick, cow stick, ltsp server, very light stick... 4 in 1 :) And all that's already supported with upstream LTSP code, except for a few INIT_COMMANDs that need to be ran until a couple of small things are fixed upstream :)
