If your clients do support 64-bit, you could rebuild the chroot by rm -rf'ing /opt/ltsp/i386/ and doing ltsp-build-client --arch=amd64 (if memory serves)

If you're using thin clients, I'd say it's better to use 32-bit, because you'll support a much wider range of clients, rather than just the ones with 64-bit capable CPU's.

It's little tricky, I think, get it working in 32 bit client to due the kernel name difference. You can try fool installer by making little uname bash script which always returns corrected name for kernel.
