ok, found PXELINUX_DEFAULT=menu option in chroot /etc/ltsp/update-kernels.conf mentioned in a chat log, tested and works! (to make the change available, outside chroot, do also ltsp-chroot --arch=i386 /usr/share/ltsp/update-kernels ; ltsp-update-kernels)
