In my second try I installed a Debian with Desktop environment, and tried to start this over ltsp, but the screen just became black, I tried with both ltsp-client-core and ltsp-client (both old packages, as they were from Debian 9 repo)

Possibly. It's true that diverting from the ltsp defaults does require knowledge.

I am not an expert. But I would suggest installing ltsp on a ubuntu first and then try on debian.

I gave it a quick spin on default on 18.04 using the ppa (following the pnp guide) and it did boot. I got a menu on the client for creating a user or something, perhaps a setting?

I think I'll stick to my ISO for now. It took me 5 minutes to set up PXE for ISO, and another five to build the iso with both docker and X. That is a fraction of a fraction of the time I've spent trying to do diskelss boot. I might switch to clonezilla or FOG later

Not sure either; I haven't tried fog. Epoptes does give you a nice environment to manage all the netbooted clients.
